Amber Harvest Raw Honey Varieties


We currently have 4 varieties of honey available: Leatherwood, Mountain Lilac, Blue Gum and Stringybark.   We produce other varieties as the seasons allow.  Some native plants do not flower in a way that yields enough nectar for a honey flow every year.  This natural variation means that the varieties and amounts of honey that we have available will change from season to season.



Leatherwood flowerLeatherwood

Leatherwood (Eucryphia lucida & Eucryphia milliganii) is a Tasmanian rainforest tree that bears a multitude of large, delicate white flowers.  Leatherwood honey has a floral, earthy flavour with spicy, citrus notes.  Our Leatherwood honey won a Silver Medal in the 2014 Royal Melbourne Fine Food Awards and a Silver Medal in the 2013 Royal Hobart Fine Food Awards.




Mountain Lilac

Mountain Lilac (Prostanthera lasianthos) is a widespread plant of wet forests, and its leaves have a minty smell when crushed.  Mountain Lilac honey has a distinctive, rich, fragrant aroma, with complex caramel notes and a touch of bitterness.  Our Mountain Lilac honey won a Silver Medal in the 2014 Royal Hobart Fine Food Awards.  Another common name for the plant from which this honey is gathered is Christmas Mint Bush.



Blue Gum

Tasmanian Blue Gum (Eucalyptus globulus) is a tall gum tree with large, white flowers and long, elegant leaves.   Tasmanian Blue Gum honey is mild with a sweet, buttery flavour, subtle aroma and a pleasant Eucalyptus taste to finish.  The Tasmanian Blue Gum is our State's floral emblem.






Stringybark flowerStringybark (Eucalyptus obliqua) is a tall Eucalyptus tree with an aromatic white flower that produces a dark coloured honey.  Stringybark honey has rich, complex caramel and toffee flavours with a slight peppery finish.  Our Stringybark honey won a Bronze Medal in the 2012 Royal Hobart Fine Food Awards.




Prickly Box

Prickly Box (Bursaria spinosa) may be a shrub or a tree with spiny branches.  It is widespread in Tasmania, particularly in drier country.  Prickly Box honey has a rich, nutty, butterscotch flavour.  The plant from which this honey is gathered is also known as Christmas Bush.  This variety is currently unavailable.
